The 7 Bellotas 100% Iberian Acorn-Fed Ham comes from Iberian pigs raised in total freedom in the dehesa (oak forests) during the montanera season, feeding exclusively on acorns and natural pastures. The 100% Iberian acorn-fed ham from 7 Bellotas is produced under limited production in the province of Salamanca. Each piece of ham undergoes a slow maturation process in a traditional curing cellar, taking advantage of the area's dry and cold microclimate.
Patient Curing: At 7 Bellotas, Time is not accelerated, it is Respected. The infiltrated fat rich in oleic acid (from the acorn) stabilizes over a minimum of 48 months, allowing the development of complex vintage aromas without the need for chemical accelerators.
Guaranteed Traceability: Each 7 Bellotas ham leg has its approved black seal and numbered batch label that guarantees its origin in selected dehesas.

7 Bellotas Pata Negra ham stands out due to the microclimatic process of the Salamanca area, which allows for lower salting compared to other southern regions. This results in a sweeter and more intense flavor on the palate, with lean fat that melts at room temperature.
The whole piece is delivered wrapped in greaseproof paper and a cloth cover. To maintain its organoleptic qualities, it is recommended to keep it hanging in a ventilated place and cover the cut area with the piece's own surplus fat.
Unlike industrial production that accelerates processes using thermal chambers and rapid salting additives, 7 Bellotas ham rests for over four years, taking advantage of the dry, cold air from the Salamanca mountains. This results in a sweet ham, low in salt, and with superior digestibility.
Keep in a cool, dry, and ventilated place (between 15°C and 22°C). After starting the cut, cover the exposed part with strips of its own surplus fat to maintain the slices' juiciness.

It comes from 100% purebred pigs raised freely in the dehesa during the montanera, fed exclusively on acorns and natural pastures, with slow artisanal curing of over 48 to 60 months in natural curing cellars and without artificial additives or nitrites.
It means that both the sire and dam of the pig are 100% pure Iberian breed registered in the official genealogical book (AECERIBER). Unlike crossed hams (50% or 75% Iberian), a 100% Iberian ham offers greater infiltration of lean fat rich in oleic acid, a soft texture, and a deeper, more intense flavor. It is identified by the black seal.

According to Royal Decree 4/2014, the official denomination "Pata Negra" is legally reserved exclusively for 100% Iberian Acorn-Fed Ham (black seal). Cebo, cebo de campo, or crossed-breed hams are Iberian, but they cannot be marketed as pata negra.
