Our 100% Iberian Bellota Ham comes from pigs of 100% Iberian breed that spend the montanera season grazing freely in the dehesa and feeding naturally on acorns, grasses and other resources found in their environment. The combination of Iberian genetics, free-range rearing and an acorn-based diet gives the ham its characteristic marbling, silky texture and complex flavour. After the curing process, which can exceed 48 months, the result is an exceptionally refined ham with a long and persistent finish. |
What does Pata Negra mean?Pata Negra is a traditional term associated with the black hoof of the Iberian pig, but it should not be used as a synonym for every Iberico Ham. In Spain, the legally defined category 100% Iberian acorn-fed ham is identified by a black seal. For this reason, when buying authentic Pata Negra Ham, it is important to check the breed and feeding category rather than relying on the name alone. |
