This is Jamón Ibérico de Cebo de Campo 50% Ibérico: a product defined by its Iberian breed, outdoor rearing, selected feeding and long natural curing process.
50% Iberian breed. Outdoor rearing. More than 36 months of curing.
7B PREMIUM® Cebo de Campo Iberian Ham is produced from pigs with 50% Iberian breed that are raised in outdoor conditions and fed with a combination of natural resources and selected feed, according to the Cebo de Campo production system.
The ham is then cured slowly and naturally for more than 36 months in Salamanca, resulting in an Iberian ham with a balanced combination of aroma, texture, juiciness and flavour.
Time is one of the defining elements of a traditionally cured Iberian ham. At 7 Bellotas®, each piece is allowed to mature slowly for more than 36 months.
During the curing process, the ham gradually loses moisture while its characteristic aromas and flavours become more concentrated, yielding a firm yet juicy texture, pleasant fat and a clean, persistent Iberian flavour.
We do not try to manufacture maturity in a hurry. We respect the time required by each piece.
The 7B PREMIUM® Cebo de Campo range is made from pigs with 50% Iberian breed, contributing to the characteristic texture, fat distribution and flavour associated with Iberian pork.
Cebo de Campo refers to an Iberian production system in which animals are raised in outdoor or extensive conditions and fed with feed based mainly on cereals and legumes, while also making use of natural resources from the countryside.
This distinguishes Cebo de Campo from both Cebo and de Bellota categories.
The character of an Iberian ham does not come from the name alone. At 7 Bellotas®, the hams are naturally cured in Salamanca, a historic Spanish region closely associated with the production and curing of Iberian pork products.
Each piece is selected individually and undergoes a traditional curing process designed to allow the ham to develop naturally. The local climate, traditional curing knowledge and long maturation process are part of the way our hams develop their final character.
After more than three years of natural curing, the ham is ready to be sliced and prepared for immediate enjoyment.
This 7B PREMIUM® Iberian ham is supplied thinly sliced and vacuum packed. Thin slicing provides a balanced combination of lean meat and fat, allowing the texture and aroma of the ham to develop as it reaches serving temperature.
Vacuum packaging helps protect the product during storage and transport. There is no need for a ham stand, carving knife or previous experience.
