7B PREMIUM® FREE-RANGE GRAIN-FED 50% IBERIAN HAM
Boneless iberico pata negra dry cured ham vacuum pack.
Boneless 7B PREMIUM® Ham

The Boneless 7B PREMIUM® Iberian Ham comes from the exact same pieces we select for whole sale. Once the optimal curing point is reached, we carefully remove the bone to offer a more practical format, without altering its flavor, aroma, or texture.
The 7B PREMIUM® 50% Iberian Breed Cebo de Campo Ham is the result of 100% artisanal elaboration, where respect for the raw material and curing time are the pillars of our philosophy.

It comes from 50% Iberian breed pigs raised free-range in the dehesa, where they develop their muscles naturally and enjoy a privileged environment. Their diet combines the natural resources of the countryside with carefully selected grain feed, resulting in a balanced meat that, after over 36 months of natural curing, offers an elegant aroma, a juicy texture, and an authentically Iberian flavor.

At 7 Bellotas, we continue to craft our hams respecting the traditional know-how of Salamanca.
Each piece is individually selected before beginning a slow process of salting and natural curing. For over 36 months, the ham matures in our cellars and curing houses, where temperature and humidity evolve naturally with the changing seasons.
We do not accelerate curing through industrial processes. We prefer to let each ham reach its peak naturally, because we know that quality takes time.
The quality of a great ham begins long before it arrives at the cellar.
Our Iberian pigs live freely in the dehesa, a unique ecosystem where they roam daily and naturally build their muscles.
Their diet combines natural pastures and local resources with selected grain feed, ensuring balanced nutrition throughout their growth. This rearing method helps produce firm, juicy meat with the distinct character of authentic Iberian pork.
Time transforms high-quality raw material into a great Iberian ham.
For over three years, each piece remains in our natural cellars in Salamanca, where it slowly loses moisture and progressively develops its texture, aroma, and complexity.
The result is a balanced ham with smoothly textured fat and a clean, persistent, and elegant flavor.
Store the piece in a cool, dry place.
Once slicing has begun, protect the cut surface with a thin slice of fat from the ham itself and cover it with a clean cotton cloth. Before serving, let it reach room temperature to fully enjoy all its qualities.

Cebo de Campo Iberian Ham comes from Iberian pigs raised free-range or in outdoor pastures. Their diet combines natural resources from the dehesa with selected grain feed, resulting in excellent meat that, after extended curing, develops the signature flavor of Iberian ham.
What is the difference between Cebo de Campo Ham and Acorn-Fed (Bellota) Ham?The main difference lies in their diet during the final rearing stage. Acorn-Fed Ham comes from animals fed exclusively on acorns and natural pastures during the montanera, while Cebo de Campo Iberian Ham combines natural field resources with selected grain feeds. In both cases, artisanal elaboration and slow curing are essential to obtain a high-quality product.
What are the benefits of free-range rearing?Daily movement fosters optimal muscle development, yielding firm, juicy, and balanced meat. Furthermore, free-range rearing in a natural environment is part of 7 Bellotas' commitment to animal welfare and product excellence.
Why does curing over 36 months improve quality?Extended curing allows the ham to slowly lose moisture and naturally concentrate its aromas and flavors. This process provides a finer texture, greater aromatic complexity, and a more elegant taste than what is achieved through accelerated curing.
How should it be preserved once started?Keep the ham in a cool, dry place. Always cover the cut surface with fat from the piece itself and a clean cloth. Allow it to return to room temperature before serving to fully enjoy its aroma and texture.
Why buy directly from 7 Bellotas?Because each ham is selected and shipped directly from our facilities without intermediaries. This allows us to guarantee traceability, control the optimal curing point, and deliver an artisanally crafted product from Salamanca with maximum care at every stage.
Quel que petit problème de livraison mais se on
Tout-va bien. Super
Very delicious
Schinken ist lecker und wurde schnell geliefert. Mir fehlt leider der schöne Schmelz von dem Fett, es ist sehr weiß und fest und schmilzt nicht, wie bei hochwertigen pata negra im Mund.
